Ricotta Cheese & Pop-Overs
Serves 4-6
Ricotta Cheese:
- 1/2 lb. goat cheese ricotta
- 1/2 lb. milk ricotta
- 3 teaspoons olive oil
Method:
In a slow speed mixer or by hand, mix the ricotta. Add olive oil and crushed red peppers to serve.
Popovers:
- 2 tablespoons all-purpose flour
- 2 cups milk
- 5 eggs
- 1/2 tsp salt
Method:
Mix milk and all-purpose flour. Whip eggs separately, then add to flour mixture. Do not overmix. Heat the molds at 500 degrees F. Add oil to the molds and pour in mixture. Place in oven for 10 minutes. Serve warm with ricotta.
