As mid-summer fades into late summer, I personally like to take advantage of every opportunity to be outdoors. For this reason, our August 19 cooking class will begin outside on Morso’s beautiful Garden Terrace for hors d’oeuvres before moving inside for the demonstration and dinner. Featured on the menu is summer cuisine that I feel is a reflection of the weather. Simple, succulent foods with ingredients that thrive on the heat and complement its qualities.


Hors d’oeuvres – Calamari al Forno – baked crisp calamari

First Demo Dish – Spaghetti  al Pomodoro Crudo – a great summer pasta showcasing heirloom tomatoes from the North Fork of Long Island

Second Demo Dish – Tourno Scottato – pan seared tuna served rare with string beans and tomatoes in a citrus marinade

Dessert – Summer Sorbet, cookies     

Each course will be paired with the perfect wine selected by Chef Pino.
